Historic Building Transforms Into Upscale Eatery

City Post Chophouse has opened its doors at 113 West 8th Street in downtown Georgetown, breathing new life into the community's former post office building. The restaurant preserves much of the 1913 structure's original character, including exposed limestone walls, restored hardwood floors, and the original postal service counter, now repurposed as the restaurant's bar.

Owner and executive chef Michael Hardin, formerly of Austin's notable steakhouse scene, spent 14 months carefully renovating the space to balance modern dining requirements with historic preservation. The dining room seats 86 guests, with additional seating for 24 on the covered rear patio.

Premium Cuts and Seafood Headline Menu

City Post Chophouse focuses on USDA Prime and American Wagyu beef selections, with signature cuts including a 32-ounce tomahawk ribeye for two ($125), bone-in filet mignon ($68), and a 45-day dry-aged New York strip ($72). Each steak is prepared in a specialized 1,800-degree broiler and finished with house-made compound butters.

Beyond beef offerings, the menu features fresh seafood delivered daily, including Maine lobster, Gulf shrimp, and seasonal fish preparations. Side dishes showcase locally sourced produce when available, with standouts including truffled mushroom risotto and roasted heirloom carrots with honey glaze.

Craft Cocktails and Extensive Wine Program

The restaurant's beverage program centers around a thoughtfully curated wine list featuring over 120 selections with particular strength in California cabernets and old-world reds. A temperature-controlled wine room displays premium bottles and serves as a semi-private dining space for special occasions.

The bar program emphasizes classic cocktails with modern interpretations, including the signature "Georgetown Mule" featuring locally distilled vodka and house-made ginger beer. A separate bar menu offers more casual fare for those seeking a less formal dining experience.

Community Impact and Future Plans

City Post Chophouse represents a significant addition to Georgetown's evolving dining landscape, creating 35 jobs and establishing a fine dining anchor in the downtown district. The restaurant has already begun hosting community events, including a monthly dinner series benefiting local historic preservation efforts.

The restaurant serves dinner Tuesday through Thursday from 5 PM to 9 PM, Friday and Saturday from 5 PM to 10 PM, and Sunday from 5 PM to 8 PM. A weekend brunch service is planned to begin in July.
